The following are the
State Mandated Nutritional Requirements
for Each Meal
(these values represent 1/3 of the USDA Dietary Guidelines for Americans
recommended daily allowances for an older adult)
Fat less than 25 mg
Protein at least 21 mg
Cholesterol less than 100mg
Carbohydrates less than 105mg
Dietary Fiber at least 10mg
Niacin at least 5.3mg
Sodium less than 800mg
Vitamin A (RAE) at least 300mg
Vitamin C at least 30mg
Calcium at least 400mg
All of these requirements must be met and then fit into a meal that is set up to have a vegetable based appetizer (relish tray, soup, salad, etc.), a protein serving, a starch serving(potatoes, noodles, rice, etc.), another vegetable serving, a bread serving, a fruit serving, and a milk serving. A great deal of effort is made to ensure that the meals served each day fall within these guidelines, are varied, and are still pleasing to our clientelle. We submit our proposed monthly meal plan each month for review, comment and approval by a registered dietitian.
